Preview Sugar & Spice Delight Quilt

Grandma's Scottish
        Shortbread Rounds

   
1 cup unsalted butter at room
      temperature
1/2 cup granulated sugar
1 teaspoon vanilla


2-1/2 cups sifted flour
1/8 teaspoon salt
Sugar crystals, red and green

By hand or electric mixer, cream butter nd sugar until fluffy; add vanilla. With wooden spoon gradually blend in dry ingredients. Divide dough into two
equal portions. Roll each piece of dough into a log approximately 1-1/2" in diameter. Sprinkle red sugar crystals on flat surface and roll first log over crystals until totally covered. Gently lift log onto plastic wrap or waxed paper and cover completely. Refrigerate several hours. Repeat with second log, using green sugar crystals. May be made a few days ahead to this point.

Preheat oven to 350°. With thin-bladed sharp knife, slice logs into 1/4" slices. Place slices on ungreased cookie sheet. Bake approximately 15 minutes. Cookies need not brown. Remove from oven just as browning begins.
Makes approximately 3 dozen cookies.
