Preview Melon Slices

Chilled Melon Soup
Sandee Wachal

5-6 cups finely chopped melon (watermelon, cantaloupe, and honey dew)

Mix with the melon:
1/4 - 1/2 cup of sugar (depending how ripe the melon is and how sweet you like it)

Whisk together:
2 cups sour cream
1 cup whole milk
2 cups ginger ale
Juice from 1/2 fresh lemon

Chilled Melon Soup

Pour mixture over fruit, lightly stir, cover, and refrigerate over night. For an extra touch, chill the soup bowls before serving.

Variations I've tried and liked:
*Substitute 1 cup of finely chopped (ripe) strawberries to replace the sugar.
*Use 1 1/2 cups ginger ale plus 1/2 cup champagne.
